Today's is pan-seared seasoned shrimp. Ideally served over rice with side green vegetable or salad.
Ingredients:
12-16 ounces uncooked shrimp (ideally better than frozen)
Scallions (served with green scallion)
Hoisin sauce (about 1/4 cup)
Large clove garlic: (minced)
Fresh ginger: mince about 1 tablespoon
Preparation:
Marinate shrimp rinsed with cold water. Season with salt and pepper. Marinate in hoisin sauce, garlic, and ginger for a minimum of ten minutes.
Place a large pan over medium heat with a generous amount of olive oil.
Add marinated shrimp and cook until the shrimp is translucent (turning once), about 3-4 minutes.
Serve over jasmine rice, topped with sliced green scallions.
Optional: drizzle with juice from lime wedge and top with sesame seeds.
The preparation is easy and the taste sublime.
Lagniappe. Serving under pressure. We used to practice "pressure free throws" with a partner. Your partner couldn't physically touch you or interfere with the shot, but they could yell, scream, be silent, or say the meanest things imaginable (teen-aged boys). We had four rounds of ten. In Boston Garden, our team made 10/10 in the fourth quarter to send the game to an overtime win.
